It has been a cold and rainy two weeks in Los Angeles, and what better way to warm up then to make a big pot of vegetable soup. Its easy, simple, satisfying and will feed the whole family.
I prefer to use organic ingredients, but of course non organic works just as well.
I will later write an in-depth post as to why I prefer organic, opposed to regular “food” products. Notice I used quotation marks on the word FOOD. There is a reason I did that, but again, that convo is for later!
Ingredients:
Vegetables: green zucchini, carrots, corn, red potatoes, celery and onion
Homemade stock or Organic vegetable stock out of a can.
Combine ingredients in a pot, add salt or pepper as needed and boil for 45 mins. Serve HOT!
