I had been wanting to post something other than fashion, but wasn’t inspired. Until I was enjoying these refreshing popsicles and it dawned on me. Why not share this easy DIY?!
I purchased my first set of popsicles molds at the start of summer via Williams Sonoma. (The ones I purchased were on sale and are no longer available, but similar ones are linked below.)

Popsicle recipes are an easy, simple way to satisfy young and old. Short prep time enables one to try various flavors without spending too much time in the kitchen.
On this occasion I was feeling tropical and went with a pineapple and coconut recipe. It was the weekend so in half of them I added some white rum. Recipe listed below.
Piña Colada Popsicle Recipe
3 cups pineapple puree
2 cups coconut milk
5 tbsp agave nectar
2 tbsp white rum
1 cup diced pineapple
Add shredded coconut to taste
Combine all ingredients (minus the diced pineapple) in food processor or blender. Divide the diced pineapple amongst the popsicle molds. Fill all molds with blended mix and allow to firm in freezer for roughly 4-6 hours.
Also, I would mark the ones that contain the rum. Don’t want to mix those up with the kiddos!
These look so yummy! 🙂
